Always faithful to the traditions of his native Gascogne region of southwest France, it's not surprising that he is a three-time winner of the Cassoulet Wars, and participated in the Pate Croute World championship four time, and a particular specialty is working with wild game. He's spent spent many years working in popular French bistros in NYC and still has a loyal following. Although he currently works privately, he's available for consulting work and private events.
