The Role Oversee the whole kitchen operations including employees, facilities and costs, so as to ensure that all food served meets the highest quality standard and that the overall Food & Beverage department profits’ are maximized.The Responsibilities Control and analyze on an on-going basis: • Quality levels of production and presentation. • Guest satisfaction. • Merchandising and Marketing Operating food cost. • Cleanliness, sanitation, hygiene.(1) Technical Responsibilities (a) Responsible for the production, preparation and presentation of all food items, to ensure highest quality at all times. Execute inspections of physical aspect the food preparation areas.(b) Produces up-to-date standard recipe file for all food items listed on the menus, to include: • Sales history • Actual cost • Production time • Picture of the finished product • Performs related duties and special projects as assigned. • Attend to specific guests as required. • Interact with individuals outside the hotel including but not limited to, clients, suppliers, government officials, competitors and other members of the local community.(2) Human Responsibilities • Establish and maintains effective employee relations in his section. • Conduct such functions as interviewing, hiring, employee orientation, performance appraisal, coaching, counseling, and suspension if necessary, to ensure appropriate staffing and productivity. • Develop formal training plans and conducts on the job training sessions for kitchen employees.(3) Relations • Report directly to the General Manager/Chef de Cuisine (Head Office). • Provide functional assistance and direction to the kitchen operation. • Supervise directly the Main Kitchen Sous chef as well as his subordinates. • Coordinate functions and activities with other Food & Beverage Departments. • Maintain interdepartmental working relationships.The Requirements • Qualification from a culinary school. • 5+ years of experience in a similar position. • In-depth knowledge of food principles and best practices. • Passion for creating incredible food that delights and attracts customers. • Excellent communication skills and leadership qualities. • Ability to thrive in a high-pressure environment. • Creative, innovative thinking. • Exceptional standards for cleanliness, health, and safety. • Experience managing inventories and stocktaking. • Available to work on-call, shifts, after hours, over weekends, and on holidays.Postuler
